Tube in tube sterilizer is special designed for processing food products with high consistency and viscosity. Product is subject to a thermal cycle by means of indirect heat exchangers made of four concentric pipes. Product flows inside the central annular space and reverses in the second layer, while heating and cooling fluids circulated both inside the two internal jackets and in the external one, in counter-flow to the product. The heated product is hold in the tubes for a certain time to the complete sterile condition, then cool down into filling temperature by cooling water or chilled water.
